A thick, crisp batter for fried shrimp or chicken strips. It is more than enough for 2 pounds of shrimp, peeled and deveined; or chicken breasts cut into 1/2 inch strips.


  • 1/2 cup of oil
  • 1 egg beaten
  • 2/3 cup of flour
  • 1/2 cup of milk
  • pinch of salt
  • 2 or 3 grinds of fresh black pepper
  • 1 or 2 dashes of Tabasco
  • 1 teaspoon Cajun powder (optional)
  • oil for frying

Mix all the ingredients, except the oil for frying, until smooth. If the batter is too thick, thin it out with a little water. Fry the shrimp or chicken strips a few at a time in hot oil at 350 F for about 3 minutes.

At the Red Lobster site they in turn credit the batter recipe to Florida Department of Agriculture and Consumer Services. Go there and find a wealth of recipes for all sorts of Florida seafood.

For extra crunch roll the battered shrimp or chicken pieces in Panko crumbs immediately before frying.
