• For 2 or 3 servings.

  • 3 strips of bacon
  • 1/2 cup chopped onions -- divided
  • 1 teaspoon of chopped garlic
  • 1/2 lb. ground beef
  • 1/4 cup ketchup
  • 1/4 teaspoon dry mustard
  • 2 tablespoons of brown sugar
  • 1 tablespoon of cider vinegar
  • 1 - 16 oz. can of baked beans, not drained
  • salt and pepper to taste

Fry the bacon until crisp, when cooled crumble and set aside. In the bacon grease fry 1/4 cup of the onions until soft then add the garlic and ground beef; stir over medium high heat until the ground beef is browned and crumbly. At this point remove as much of the accumulated grease from the frying pan as you wish. Put the ground beef, onion and garlic mixture in a heavy, oven proof pan, add all the other ingredients, except the crumbled bacon and the remaining chopped onion, mix well and heat in a 400 degree oven for 30 to 40 minutes. Serve with the crumbled bacon and chopped raw onion on top.

This is good with some fresh hot cornbread. You can make the Beefy Baked Beans ahead and bake the next day.
