| Directions Mix all the ingredients well and chill for at least
an hour before using. It is good on hamburgers and roast beef sandwiches.

| Notes This recipe is an attempt to copy the Cajun Mayonnaise
served at Flounders Chowder
House on Pensacola Beach in Florida. It is intended to be spicy but
not extremely hot. Crystal is milder than Tabasco. Cayenne often varies
a lot in its heat. Taste the mixture as you make it and use your judgment.
