Adapted from Emeril's Creole Seasoning


  • 5 tablespoons of paprika
  • 1 teaspoon of Cayenne pepper
  • 1 tablespoon of dried basil
  • 1 tablespoon of dried oregono
  • 1 tablespoon of dried thyme
  • 1 tablespoon of onion powder
  • 2 tablespoons of garlic powder
  • 1 teaspoon of salt (optional)
  • 1 tablespoon of fresh ground black pepper

Mix all the ingredients together and spin in a spice grinder, coffee grinder or rub the mixture through a fine metal strainer. Store the product in an airtight jar.


The quantities listed for this basic recipe are approximate. Use what you have on hand and add or subtract as you like. Some recipes call for rosemary but be careful, too much can be overpowering. Add as much salt as you like, but it doesn't need much if any. For an Asian flavor add some cinnamon, nutmeg, curry powder or five-spice powder. For Southwest flavor add some cumin and chili powder.
