• This makes about four servings.
  • 2 cups of cold cooked rice
  • 2 eggs
  • 1/2 teaspoon of fresh ground black pepper
  • 2 tablespoons of oil
  • 1/2 cup to 1 cup of thinly sliced green onions
  • 2 tablespoons of low sodium soy sauce
  • 1/2 cup of diced ham
  • two or more of the following:
  •    •1/4 cup of green peas, lightly cooked
  •    •1/4 cup of diced carrots, lightly cooked
  •    •1/4 cup of diced onion, sautéed
  •    •1/4 cup of diced celery, lightly cooked
  •    •1/4 cup of canned whole kernel corn
  •    •1/2 cup of bean sprouts, canned or raw

Low Sodium Soy


Using a small bowl beat the eggs and the black pepper with a fork. Heat the oil in a wok or frying pan until it is almost smoking. Add the green onions and stir for 15 seconds. Reduce heat to medium and add the eggs stiring until they are barely cooked, then add the rice and stir until the eggs, onions and rice are evenly mixed. Add the soy sauce, ham and vegetables. Mix all the ingredients well. Correct the seasoning with salt, black pepper and more soy sauce if you wish. Stir until hot and serve immediately.


Instead of ham you can use almost any leftover meat or seafood -- turkey, chicken, roast pork, shrimps...
