Uncle Charlie's Hot Salad

Ingredients

  • This makes a lot.
  •  
  • 1 large or 2 medium onions, chopped fine
  • 2 bell peppers chopped fine
  • 2 stalks of celery, chopped fine
  • 4 lettuce leaves, chopped fine
  • a few sprigs of parsley, chopped fine
  • 2 or 3 tomatoes, chopped fine
  • 1 can salmon
  • add salt and vinegar to taste
  • salad oil to make it moist
  • red pepper to make it very hot

Directions

Chop and mix well together. Put in refrigerator and store overnight.

Notes

Joan and Jack’s grandfather was a beloved figure in McComb, Mississippi. Everybody called him “Uncle Charlie.” He made this fiery salad almost every Friday night, serving it to his cronies with lots of beer, saltine crackers and off-key choruses of “When Irish Eyes Are Smiling.”
