Teriyaki Sauce


  • Makes one cup

    • 1/2 cup of low sodium soy sauce
    • 1/2 cup of mirin
    • 1/4 cup of sugar



Combine all ingredients in a saucepan. Stir the mixture well. Put it on medium heat and bring to a boil. Turn down the heat to low and simmer for 10 or 15 minutes. Remove from heat, cover and let cool. Store in the refrigerator. If you don't have mirin, you can substitute Marsala or sherry.


Many kinds of bottled teriyaki sauce are sold at grocery stores, but this authentic Japanese basic Teriyaki sauce is easy to make at home with just a few ingredients. The key ingredient is mirin which adds luster to ingredients when cooking with the sauce. You can use white sugar or brown sugar.
