Tortilla Soup

  •  
  • INGREDIENTS
  • This recipe makes four hearty servings

  • 4 cups of chicken broth
  • 1 cup of water
  • 2 teaspoons of fresh garlic minced
  • 1/2 teaspoon of garlic powder
  • 1/2 cup of onion chopped fine
  • 2 tablespoons of canned mild green chiles chopped fine
  • 2 or 3 teaspoons of Adobo powder
  • a large handfull of broken up corn tortilla chips, or 1/2 cup of cut up corn tortillas
  • 2 or 3 cups of cooked chicken shredded or cut in chunks
  •  
  • For garnish, one or more of the following:
  • crushed tortilla chips, sliced avocado, sprigs of cilantro, diced tomato, shredded cheddar or jack cheese, sour cream, chopped red onion.

Tortilla Soup

DIRECTIONS
Mix the chicken broth, water, garlic, garlic powder, onion, chiles, and Adobo powder and simmer for 20 minutes. Add the tortilla chips (rinse the salt off under running water first if you wish) and simmer for another 10 minutes. Add the chicken and cook until heated through. Serve with your choice of garniches. Or all of them.


NOTES
It's easy to let the soup get too salty, what with the salt in the chicken broth, corn chips and some commercial Adobo powders. Because I don't like a lot of salt in my food I use low-sodium chicken broth and I make my own salt-free Adobo spice mix. You can find the recipe by clicking here.
